Chicken Pearl Barley Bake
Ingredients
  • 3 tablespoons butter
  • 1 large onion, chopped
  • 2 ribs celery, chopped
  • 1 cup pearl barley
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 green bell pepper, chopped
  • salt and ground black pepper to taste
  • 2 cups chicken broth

Preheat your oven to the desired temperature of 350 degrees F (175 degrees C).

Melt butter in a suitable-sized Dutch oven or oven-safe container over medium heat. Allow the butter to melt and then add sliced onions, cooking them until they reach a light brown color, approximately 5 to 8 minutes. Next, add diced celery and stir constantly until it begins to soften, roughly 5 minutes later.

Add the barley to the pot and stir until it is evenly coated with butter. Then, incorporate sliced mushrooms and bell peppers into the mixture, seasoning with salt and black pepper to taste. Pour in chicken broth and bring the mixture to a rolling boil.

Cover the Dutch oven with a lid, then place it in the preheated oven to bake until the barley is almost tender, around 30 minutes. Remove the lid and continue baking for an additional 15 minutes, allowing most of the liquid to evaporate.
