Chicken Pasta Skillet
Ingredients
  • 1/2 (8 ounce) package spaghettini
  • 2 tablespoons olive oil
  • 8 roma (plum) tomatoes, halved and sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 1 pinch salt
  • 1 teaspoon ground black pepper
  • 1 1/2 teaspoons white sugar
  • 1 tablespoon ketchup
  • 2 skinless, boneless chicken breasts, cut into thin strips
  • 2 garlic cloves, crushed
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup sliced fresh mushrooms
  • 1/4 cup grated Parmesan cheese
Instructions
1
Begin by filling a large container with water and placing it on the stovetop over maximum heat. Once the water reaches its boiling point, add a substantial amount of spaghettini and bring it back to a rolling boil. Cook the pasta until it reaches the desired level of doneness, but still retains some firmness when bitten into. This should take anywhere from 6 to 8 minutes, depending on the specific type of pasta being used. Remove the cooked pasta from the water with a strainer and set it aside to keep warm.
2
Meanwhile, heat 2 tablespoons of oil in a large cooking vessel over medium heat. Add diced tomatoes to the pan and let them cook until they soften and begin to break down, releasing their natural juices. Add a blend of herbs and spices, including garlic powder, oregano, basil, salt, pepper, sugar, and ketchup, to the pan. Stir everything together and let the sauce simmer for a few minutes until it reaches the desired consistency.
3
In a separate cooking vessel, heat an additional 3 tablespoons of oil over medium heat. Add diced chicken to the pan and cook until it is nicely browned on all sides. Add minced garlic cloves to the pan and let them cook for an additional minute, infusing the chicken with flavor.
4
Remove the cooked chicken from the pan and set it aside. Increase the heat to maximum and add sliced bell peppers, onion, and mushrooms to the pan. Let them cook until they begin to soften and release their natural juices. Add the browned chicken back into the pan and stir everything together.
5
Decide on a suitable cooking time for the chicken and vegetables by checking that the chicken is no longer pink in the center and the vegetables are cooked through. This should take around 5 minutes.
6
Combine the cooked chicken, vegetables, and hot pasta in a single serving vessel. Add a generous helping of tomato sauce to the mixture and stir everything together. Finally, sprinkle some Parmesan cheese on top of the dish before serving.
