Chicken Parmesan Delight
Ingredients
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 6 chicken breast tenderloins
  • 1 egg
  • 1 tablespoon half-and-half
  • 1 cup seasoned bread crumbs
  • 1/2 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon minced fresh flat-leaf parsley
  • 2 tablespoons olive oil
  • 3 quarts water
  • 1 tablespoon salt
  • 6 ounces angel hair pasta
  • 1 1/2 cups prepared marinara sauce, divided
  • 3 ounces shredded Italian cheese blend
Instructions
1
Preheat the oven to a high temperature of 375 degrees F (or 190 degrees C).
2
Next, lightly coat a large baking dish with a thin layer of oil or cooking spray.
3
To make the coating mixture, combine flour, 1/2 teaspoon of salt, garlic powder, black pepper, and cayenne pepper in a sealed plastic bag.
4
Add the chicken tenderloins to the flour mixture and seal the bag, then shake vigorously to evenly distribute the coating.
5
In a separate bowl, whisk together egg and half-and-half until smooth.
6
Mix together bread crumbs, Parmesan cheese, and parsley in another shallow bowl.
7
Dip the floured chicken tenderloins into the egg mixture, allowing any excess to drip off before pressing them firmly into the bread crumb mixture.
8
Allow the breaded chicken to rest on a plate for about 10 minutes, allowing the coating to set.
9
Heat a generous amount of olive oil in a large skillet over medium heat.
10
Cook the chicken tenderloins in hot oil until they are no longer pink in the center and the juices run clear, about 5 minutes per side.
11
Use an instant-read thermometer to check the internal temperature of the chicken, aiming for 165 degrees F (or 74 degrees C).
12
In a separate pot, bring water and 1 tablespoon of salt to a boil.
13
Cook the angel hair pasta in boiling water, stirring occasionally, until it is cooked through and tender.
14
Drain the excess water from the pasta.
15
Pour 3/4 cup of marinara sauce into a prepared baking dish.
16
Top the sauce with the cooked pasta and arrange the chicken tenderloins on top.
17
Sprinkle a blend of Italian cheese over the pasta and chicken.
18
Bake in the preheated oven until the cheese is melted and bubbly, about 10 minutes.
