- 1 tablespoon olive oil
- 2 tablespoons red curry paste, or more to taste
- 3/4 cup sliced red onion
- 3 cups chicken stock
- 1 (14 ounce) can full-fat coconut milk
- 1 1/2 cups sliced bok choy
- 1/4 cup chopped cilantro
- 3 tablespoons fish sauce
- 2 teaspoons honey
- salt and ground black pepper to taste
- 1 (8 ounce) package dried rice noodles
- 4 wedges fresh lime

Begin by preheating your oven to 375 degrees Fahrenheit, or 190 degrees Celsius. Next, prepare a baking sheet by lining it with parchment paper and setting it aside for later use.

In a large mixing bowl, combine ground chicken, bread crumbs, egg, soy sauce, grated ginger root, chopped green onions, minced garlic, and red pepper flakes. Using a cookie scoop, shape the mixture into small balls and place them on the prepared baking sheet.

Place the baking sheet in the preheated oven and bake until the chicken is no longer pink in the center, approximately 12 minutes. Remove it from the oven and set it aside.

In a large saucepan, heat olive oil over medium heat. Add curry paste and cook until fragrant for about 1 to 2 minutes. Then, add sliced red onion and cook for another minute.

Add chicken stock, coconut milk, chopped bok choy, cilantro, fish sauce, and honey to the saucepan. Stir until everything is well combined.

Bring the mixture to a boil, then reduce heat to medium. Add the meatballs and simmer until heated through, around 6 to 8 minutes.

Season with salt and pepper to taste. Next, cook rice noodles in a large bowl by covering them with hot water.

Allow the noodles to soften for about 15 minutes, then drain well. Divide the noodles evenly among bowls and ladle the soup and meatballs on top.
