Ingredients
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon chopped fresh parsley
- 1/2 teaspoon dried dill weed
- 1/4 cup butter, divided
- 4 boneless, skinless chicken breast halves
- 1 pound fresh mushrooms
- 1 onion, sliced into rings
- 1/2 cup white wine
- 8 ounces Gruyere cheese, shredded
Instructions
1
Preheat your oven to a hot temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer). In a small container, mix together the flour, salt, pepper, parsley, and dill. Clean chicken breasts thoroughly, and gently pat them dry with a paper towel. Coat the chicken in the flour mixture.
2
Heat 2 tablespoons of butter in a large skillet over high heat. Place chicken breasts into the hot, melted butter, and sear until they are nicely browned on both sides. Transfer the chicken to a 1 quart glass baking dish. Add the remaining butter to the skillet, and sauté sliced mushrooms and onions until they are tender and lightly browned. Add a splash of white wine to the skillet, and lower the heat to medium. Let it simmer for 3 minutes to allow the flavors to meld together. Pour the mushroom mixture over the chicken in the dish.
3
Cover the dish, and bake it in the preheated oven for 20 minutes. After 20 minutes have passed, lift the cover, and sprinkle shredded cheese over the top of the chicken. Continue baking for an additional 10 minutes, or until the cheese is lightly browned and bubbly.
