Chicken Gravy Sliders
Ingredients
  • 3 pounds whole chicken
  • 2 onions, quartered
  • 3 stalks celery, cut into 1 inch pieces
  • 2 bay leaves
  • salt and pepper to taste
  • 1 egg
  • 4 cups all-purpose flour

First, prepare the chicken by rinsing it under cold water and placing it in a large container. Cover the chicken with plenty of water, then add an assortment of chopped vegetables, a few bay leaves, and a pinch of salt and pepper.

Bring the mixture to a rolling boil, then gradually decrease the heat and let it simmer for approximately 2 hours or until the meat can be easily detached from the bones. Remove the chicken from the liquid and strain it to separate the broth from the solids.

Discard the vegetables and reserve the flavorful broth. Once the chicken has cooled, carefully extract the meat from the bones, leaving it in relatively large pieces.

To create the noodles, combine a beaten egg with some of the reserved broth and gradually incorporate it into a measured amount of flour, adding more broth as needed to achieve the desired consistency. Knead the mixture until it forms a cohesive ball.

Roll out the dough on a lightly floured surface and cut it into strips approximately 1.5 inches wide and 3 inches long. Don't worry about the irregular shape of the noodles.

Heat the reserved broth to a rapid boil, then carefully add the noodles and let them cook for about 5 minutes. Gradually decrease the heat, then add diced chicken to the pot and simmer until the broth has thickened into a rich gravy-like consistency. If necessary, add a small amount of flour to thicken the mixture further. Season with salt and pepper to taste.
