Chicken Gnocchi Soup
Ingredients
  • 1/2 cup margarine
  • 3/4 cup finely chopped onion
  • 3/4 cup finely chopped celery
  • 1/2 cup finely grated carrot
  • 1 1/2 teaspoons minced garlic
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 3/4 cup half-and-half
  • 3/4 cup milk
  • 1 (16 ounce) package potato gnocchi
  • 1 1/2 cups chopped cooked chicken
  • 3/4 cup shredded fresh spinach
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon nutmeg
Instructions
1
Heat a large, heavy saucepan over medium heat and melt the margarine within it. Allow the onion, celery, carrot, and garlic to cook in the hot margarine until they become tender, taking anywhere from 5 to 10 minutes to achieve this.
2
Next, incorporate the flour into the vegetable mixture and continue cooking and stirring until the vegetables are evenly coated with the flour and it has a pleasant aroma, which should take around 3 to 4 minutes.
3
Now, introduce the chicken broth, half-and-half, and milk into the saucepan with the vegetable mixture. Continue to cook and stir until the mixture thickens, comes to a boil, and reaches a desired consistency, which should take about 5 minutes.
4
Subsequently, reduce the heat to its lowest setting and add the gnocchi, chicken, and spinach into the saucepan. Season with rosemary, salt, black pepper, and nutmeg according to your preference.
5
Finally, allow the soup to simmer over low heat until the gnocchi becomes tender and palatable, which should take around 8 to 10 minutes.
