  • 1 onion, diced
  • 1 1/2 pounds cooked, cubed chicken meat
  • 2 tablespoons soy sauce
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 large red bell pepper, diced
  • 3/4 cup fresh pea pods, halved
  • 1/2 large green bell pepper, diced
  • 6 cups cooked white rice
  • 2 large eggs, scrambled
  • 1/3 cup soy sauce

Preheat a large skillet over medium heat, allowing the sesame oil to warm up. Introduce the onion into the skillet and cook until it becomes tender and soft. Next, add in the cooked chicken and 2 tablespoons of soy sauce; continue to stir-fry for approximately 5-6 minutes.

Subsequently, incorporate the carrots, celery, red bell pepper, pea pods, and green bell pepper into the skillet; stir-fry for an additional 5 minutes. Combine cooked rice with the vegetables and continue to stir until they are fully incorporated.

Finally, add scrambled eggs and 1/3 cup of soy sauce to the skillet; cook until the eggs are heated through, and serve the dish hot.
