Ingredients
  • 2 (4 ounce) skinless, boneless chicken breast halves
  • 1/4 cup sun-dried tomato dressing
  • 8 sun-dried tomatoes (not oil packed)
  • 1 cup boiling water
  • 1/3 cup crumbled feta cheese
  • 4 cups loosely packed torn fresh spinach
  • 4 (10 inch) whole wheat tortillas
  • 1/4 cup sun-dried tomato dressing

Combine chicken breasts with 1/4 cup of dressing in a large, airtight container. Chill in the refrigerator for several hours prior to cooking.

Heat your grill to extremely high temperatures. Mix sun-dried tomatoes with hot water in a small bowl, allowing it to sit for 10 minutes. After the waiting period, drain the water and cut the tomatoes into thin slices.

Apply a small amount of oil to the grill grates. Discard the marinade and place the chicken breasts on the grill. Cook for 12 to 15 minutes, flipping once, or until it reaches the desired level of doneness.

Cut the cooked chicken into strips and place them in a medium-sized bowl. Add sliced tomatoes, crumbled feta cheese, and fresh spinach to the bowl with the chicken. Mix everything together using the remaining 1/4 cup of dressing. Divide the mixture among four tortillas and wrap them tightly.

Alternatively, you can either serve the wrapped tortillas cold or briefly place them back on the grill to warm and crisp up the tortilla.
