  • 1 pound skinless, boneless chicken breasts, cut into strips
  • 1 (1.27 ounce) packet fajita seasoning
  • 1 red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 poblano pepper, cut into thin strips
  • 1 large onion, cut into thin strips
  • 1 (15 ounce) can seasoned black beans
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1 (14 ounce) can chicken broth
  • 1 dash hot sauce
  • salt and pepper to taste

Preheat the large soup pot over medium heat by warming up the oil inside. Next, add the chicken to the pot and cook for about 10 minutes, stirring occasionally until it reaches a nice brown color.

Now, sprinkle the fajita seasoning over the chicken and mix it well to coat everything evenly.

After that, add the sliced bell peppers, diced poblano pepper, and chopped onion to the pot. Continue cooking over medium heat until all the vegetables are tender and soft, taking around 10 minutes.
