Chicken Fajita Pasta Casserole
Ingredients
  • 1 pound ziti pasta
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 1 medium green bell pepper, sliced
  • 1 pound boneless chicken breast, cubed
  • 1 (16 ounce) jar salsa
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (1 ounce) package taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (16 ounce) package shredded Cheddar cheese, divided

Fill a large pot with water that has been lightly seasoned with salt and bring it to a furious boil.

Add the ziti pasta and return the pot to a rolling boil. Cook, stirring occasionally, until the pasta is tender but still retains some firmness in the center, approximately 10 minutes.

Drain the pasta.

In a separate skillet, heat oil over medium heat and sauté sliced onions and green peppers until they become soft and tender, taking around 5 to 7 minutes.

Transfer the cooked vegetables to a bowl.

Cook diced chicken in the same skillet until it reaches an internal temperature of 165 degrees F, indicating that it is no longer pink in the center, approximately 7 to 10 minutes.

In a saucepan over low heat, combine salsa, softened cream cheese, and taco seasoning. Stir constantly until the cream cheese is fully incorporated and melted, taking around 5 minutes.

Combine cooked ziti pasta, chicken, the salsa mixture, sautéed onion mixture, black beans, and corn in a large bowl. Add half of the Cheddar cheese and mix until everything is well combined.
