  • 2 tablespoons butter
  • 1 onion, diced
  • 2 ribs celery, sliced thin
  • 2 tablespoons all-purpose flour
  • 2 (14.5 ounce) cans chicken broth
  • 3/4 pound new potatoes, cut into 1/2-inch dice
  • 2 cups frozen mixed vegetables
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter, cubed
  • 3/4 cup milk, or more as needed
  • 2 tablespoons dried dill

To prepare the stew: First, remove the bones from a rotisserie chicken and cut the remaining meat into bite-sized pieces. Set these aside for later use.

Next, melt butter in a large Dutch oven over medium heat and cook the sliced onion and chopped celery in hot butter, stirring frequently, until they become soft and fragrant, approximately 10 minutes.

Then, sprinkle some flour into the pot and whisk continuously to create a smooth paste, also known as a roux, which should take about 2 minutes.

After that, slowly pour in the broth while continuously whisking to remove any lumps that may have formed.

Now, add diced potatoes, frozen vegetables, salt, black pepper, dried basil, and fresh thyme to the pot. Cover it and cook over medium heat until all the vegetables are tender, which should take around 15 to 20 minutes.

At this point, add the cooked chicken meat back into the stew and continue to simmer it.

While the stew is cooking, prepare the dumplings: In a large bowl, combine flour, baking powder, and salt. Then, use two knives or a pastry blender to cut in the butter until you get a mixture that resembles coarse crumbs.

Next, stir in milk and fresh dill to bring the dough together.

Finally, drop rounded tablespoonfuls of the dumpling mixture into the simmering stew. Cook it uncovered for 10 minutes, then cover and cook until the dumplings are tender, which should take around 8 to 10 minutes more.
