  • 1 bay leaf
  • salt and ground black pepper to taste
  • 2 1/4 cups baking mix (such as Bisquick ®)
  • 2/3 cup milk

Combine a flavorful chicken broth with diced chicken, sautéed onion, chopped carrots, and sliced celery in a large cooking vessel; heat to a rolling boil. Decrease the heat, cover the pot with a lid, and let it gently simmer until the chicken is no longer pink in its center and the vegetables are tender, taking approximately 20 to 25 minutes.

Meanwhile, whisk together a dry baking mix and milk in a separate mixing container until a smooth, albeit sticky, dough forms. Form the dough into small balls, roughly the size of a golf ball, and gently drop them into the simmering soup. Cover the pot once again with its lid and let it continue to cook until the dumplings are fully cooked through, taking around 10 additional minutes.
