Chicken Cream Cheese Enchiladas
Ingredients
  • olive oil cooking spray
  • 1 pound ground chicken
  • 1 medium onion, minced
  • 1 (1 ounce) envelope taco seasoning mix
  • 1/2 cup water
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/3 (8 ounce) package cream cheese, cut into chunks
  • 1/2 cup sour cream
  • 1 teaspoon ground black pepper
  • 2 (10 ounce) cans enchilada sauce
  • 8 (6 inch) flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Mexican-blend cheese
  • 1 bunch green onions, sliced
  • 1 (4 ounce) can sliced black olives

Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently, 175 degrees Celsius.

Spray a 9x13-inch baking dish with the recommended cooking spray to prevent food from sticking.

Heat a large skillet over the medium-high heat setting, and cook ground chicken and onion in it until the chicken is cooked through, no longer pink, crumbly, and the onion is tender, taking around 5 to 7 minutes.

Add taco seasoning over the top of the cooked chicken mixture, followed by 1/2 cup of water. Stir and cook until all the water has evaporated, which should take an additional 5 to 8 minutes.

Mix in the cream of chicken soup, chunks of cream cheese, and sour cream into the cooked chicken mixture. Stir until it's fully incorporated and melted.

Add a pinch of black pepper to the mixture for added flavor.

Pour one can of enchilada sauce into the prepared baking dish, spreading it evenly to cover the bottom.

Divide the chicken mixture between 8 tortillas and roll them up tightly, making sure they're secure.

Place the rolled tortillas seam-side down in the prepared baking dish, with 5 fitting lengthwise and the remaining 3 widthwise to fill the dish.

Pour a second can of enchilada sauce over the rolled tortillas, covering them completely.
