Chicken Chilaquiles Bake
Ingredients
  • 1/4 pound chorizo
  • 2 skinless, boneless chicken breast halves, cut into 1-inch cubes
  • 1/2 (10 ounce) bag tortilla chips
  • 1 cup frozen corn kernels
  • 1 (19 ounce) can green enchilada sauce
  • 1/2 cup sour cream
  • 2 cups shredded Monterey Jack cheese
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius to prepare it for baking.
2
Heat a large, deep skillet over a high heat setting, and cook the spicy Spanish sausage chorizo in it until it reaches a crumbly texture, taking around 5 minutes to achieve this.
3
Add the chicken to the skillet and cook it thoroughly, stirring occasionally, until the chicken is fully cooked through and no longer pink in its center, which should take about 10 minutes.
4
Place half of the tortilla chips at the bottom of a large casserole dish, followed by the chicken mixture. Add a layer of corn on top of the chicken and finish with another layer of tortilla chips.
5
In a separate bowl, whisk together the green enchilada sauce and sour cream until well combined. Pour this mixture over the tortilla chips, followed by a generous helping of shredded Monterey Jack cheese.
6
Place the casserole dish in the preheated oven and bake it until the entire dish is bubbly, with the tortilla chips beginning to brown and crisp up, which should take around 15 to 20 minutes.
