Ingredients
- 1 (16 ounce) package penne pasta
- 1/4 cup extra-virgin olive oil
- 2 tablespoons unsalted butter
- 1 medium yellow onion, finely chopped
- 3 teaspoons minced garlic
- 4 ounces thinly sliced pancetta bacon, chopped
- 4 ounces thinly sliced prosciutto, chopped
- 4 cups shredded, cooked rotisserie chicken
- 2 1/2 cups heavy whipping cream, at room temperature
- 1 cup grated Parmigiano-Reggiano cheese, or more to taste
- 3 large egg yolks, at room temperature
- 1/4 cup chopped fresh basil
- 1/4 cup chopped Italian (flat-leaf) parsley
- salt and ground black pepper to taste
Instructions
1
Begin by filling a substantial container with salted water, then bring it to a rolling boil.
2
Add penne pasta and cook, stirring occasionally, until the pasta reaches your desired level of doneness yet still retains a slight firmness in the center, approximately 10 to 11 minutes.
3
Remove from heat and drain excess water.
4
Meanwhile, in a separate cooking vessel, warm oil over medium heat; add an onion and garlic for added flavor. Cook and stir the mixture until the onion has softened and turned a translucent color, roughly 4 minutes.
5
Add diced pancetta and prosciutto; continue cooking until the meat is crispy and golden brown, around 8 minutes.
6
Introduce cooked chicken into the skillet; stir until heated through, approximately 2 minutes.
7
Set aside to cool slightly.
8
In a separate bowl, combine heavy cream, grated Parmigiano-Reggiano cheese, egg yolks, fresh basil leaves, and chopped parsley. Whisk the ingredients together until they are fully incorporated.
9
Return the chicken mixture to the stovetop over medium-low heat. Add cooked penne pasta and cream mixture; stir until the pasta is evenly coated with the creamy sauce, roughly 4 minutes.
10
Avoid letting the mixture boil or come to a boil, as this can cause the eggs to scramble.
11
Taste and adjust seasoning with salt and pepper if necessary.
12
Transfer the pasta mixture to a large, wide serving dish and serve immediately.
