Ingredients
- 1 (28 ounce) can diced tomatoes
- 1 cup dry red wine
- 1 cup chicken stock
- 2 tablespoons tomato paste
- 2 cubes chicken bouillon
- 1 1/2 pounds skinless, boneless chicken breast halves
- 2 tablespoons dried Italian seasoning
- 3 tablespoons extra-virgin olive oil, or as needed
- 2 bell peppers, thinly sliced
- 1 red onion, thinly sliced
- 1 cup sliced crimini mushrooms (baby bella)
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup sliced black olives
- 3 tablespoons prepared pesto (Genovese)
- 1 1/2 teaspoons white sugar, or to taste
Instructions
1
Initial Preparation
2
First, preheat your slow cooker to its highest temperature setting.
3
Combining Ingredients
4
In a large mixing container, combine tomatoes, wine, chicken stock, tomato paste, and chicken bouillon. Ensure all ingredients are well incorporated.
5
Preparing the Chicken
6
Trim any excess fat from your chicken breasts, if necessary. Sprinkle both sides of the chicken with Italian herb blend.
7
Cooking Chicken
8
Heat a moderate amount of olive oil in a skillet over low-medium heat. Sear the chicken breasts until they are nicely browned, flipping them halfway through the cooking process - approximately 3 to 5 minutes per side.
9
Transferring Chicken
10
Transfer the cooked chicken breasts to your slow cooker, along with any juices that have accumulated during cooking.
11
Cooking Vegetables
12
In the same skillet, add more olive oil if needed. Cook and stir a variety of vegetables - bell peppers, onion, mushrooms, and garlic - until the onion becomes translucent, approximately 5 minutes. Stir in flour; cook until the vegetables are soft and tender, another 5 minutes.
13
Combining Tomato Mixture
14
Stir in the tomato mixture; bring the mixture to a boil. Simmer until it thickens slightly, about 5 minutes more. Stir in olives; transfer the mixture to your slow cooker.
15
Cooking Chicken Mixture
16
Reduce the heat of your slow cooker to its lowest temperature setting. Cook until the chicken is extremely tender, approximately 5 1/2 to 6 1/2 hours. Stir pesto and sugar into the chicken mixture; cook for an additional 30 minutes.
