Chicken Broccoli Stir-Fry with Almonds

  • 6 tablespoons soy sauce
  • 3 tablespoons cornstarch, divided
  • 4 large skinless, boneless chicken breasts, cut into thin strips
  • 2 cups boiling water, or more as needed
  • 1 1/2 tablespoons instant chicken bouillon granules
  • 1/2 teaspoon ground ginger, or more to taste
  • 1/4 cup canola oil, divided
  • 2 tablespoons sesame oil, divided
  • 4 cups fresh broccoli florets, or more to taste
  • 1 medium red bell pepper, cut into thin strips
  • 1/2 green bell pepper, cut into thin strips
  • 1 medium onion, diced
  • 2 tablespoons minced garlic
  • 1/2 teaspoon crushed red pepper, or more to taste
  • 1 cup toasted slivered almonds

Combine soy sauce and 1 tablespoon of cornstarch in a container suitable for refrigeration. Add the chicken, stirring to evenly coat it with the mixture. Ensure that all air is removed from the bag before sealing, or cover the container. Refrigerate for at least 30 minutes to allow the flavors to meld.

Combine boiling water and bouillon granules in another container, stirring until the granules are fully dissolved. Add the remaining cornstarch and ginger, mixing them together to create a uniform blend.

Heat half of the canola oil and 1 tablespoon of sesame oil in an electric skillet or a heavy skillet over medium-high heat, reaching the temperature of 365 degrees F (185 degrees C). Add broccoli, bell peppers, onion, and garlic to the skillet. Stir-fry until they are crisp-tender, taking approximately 5 to 7 minutes.

Remove the vegetables from the skillet with a slotted spoon and transfer them to a serving dish.

Heat the remaining canola oil and 1 tablespoon of sesame oil in the same skillet over medium-high heat, reaching the temperature of 365 degrees F (185 degrees C). Add the chicken mixture and crushed red pepper, stirring until the chicken is cooked through and no longer pink in the center. The juices should run clear, taking around 7 to 10 minutes.

Return the vegetables to the skillet. Combine the bouillon mixture, stirring until it thickens. If desired, stir in optional almonds to add texture and flavor.
