Ingredients
- 3 tablespoons olive oil
- 1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
- 1 tablespoon chopped onion
- 2 cloves garlic, chopped
- 2 (14.5 ounce) cans diced tomatoes
- 2 cups fresh broccoli florets
- salt and pepper to taste
- 1 pinch dried oregano
- 18 ounces dry penne pasta
- 1/4 cup fresh basil leaves, cut into thin strips
- 2 tablespoons grated Parmesan cheese

Heat a large skillet over medium heat and warm the oil until it starts to shimmer. Add the chicken and cook for a few minutes on each side, or until it develops a light brown color. Next, add the sliced onion and minced garlic to the skillet and cook for around 5 minutes, or until the garlic is golden brown and the onions are soft.

Now, add the chopped tomatoes, steamed broccoli, salt, pepper, and dried oregano to the skillet. Stir everything together and bring the mixture to a rolling boil. Cover the skillet with a lid and reduce the heat to a low simmer for about 10 minutes.

While the pasta is cooking, bring a large pot of salted water to a boil. Add the pasta and cook for 8-10 minutes, or until it's tender and slightly firm to the bite. Drain the pasta in a colander and return it to the pot.

Pour the prepared chicken sauce into the pot with the pasta and mix everything together. Add a handful of chopped fresh basil leaves to the pot and toss the pasta gently to combine.

Finally, sprinkle some grated Parmesan cheese over the top of the pasta and serve it hot.
