Chicken Bolognese

  • 3 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 white onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 (28 ounce) can peeled and crushed tomatoes
  • 4 button mushrooms, chopped
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon white sugar
  • 4 cups uncooked rotini pasta
  • 1/4 cup grated Parmesan cheese for topping

Preheat a large skillet over medium heat, allowing the oil to warm up. Sear chicken, onion, and garlic in hot oil until the chicken is almost fully cooked through, taking around 10 minutes. Introduce crushed tomatoes, mushrooms, and Italian seasoning into the skillet, stirring constantly to combine. Continue cooking for about 5 minutes.

Decrease the heat and add sugar to the mixture, allowing it to simmer for at least 15 minutes.

In a separate pot, bring a large amount of lightly salted water to a rolling boil; cook rotini at the boiling point until it is tender but still retains some firmness, taking around 8 minutes. Drain the water.

Present rotini on a plate, topped with the chicken mixture and sprinkled with grated Parmesan cheese.
