  • 2 chicken breasts, cut into 2 inch pieces
  • 1 (16 ounce) can stewed tomatoes, undrained
  • 1 (8 ounce) package black beans, cooked and drained
  • 1/2 cup uncooked white rice
  • 2 ounces green chile peppers, diced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon ground cumin

In a large skillet, melt butter over medium heat. Sauté sliced onions in the hot butter until they become soft and slightly transparent, taking around 3 to 4 minutes. Add diced chicken breast; cook, stirring occasionally, until it's golden brown on all sides and cooked through, approximately 10 minutes.
