Chicken Biscuit Bake
Ingredients
  • 1/4 cup butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped baby carrots
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 (10 ounce) can peas, drained
  • 4 cups diced, cooked chicken meat
  • 2 cups buttermilk baking mix
  • 2 teaspoons dried basil
  • 2/3 cup milk
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer).
2
Next, lightly coat a 9x13-inch baking dish with non-stick cooking spray to prevent the chicken mixture from sticking.
3
Melt butter in a large skillet over high heat, stirring occasionally until it reaches a light brown color.
4
Add chopped onion, celery, carrots, and garlic to the skillet with the melted butter and cook until they are tender and lightly browned.
5
Mix in flour, granulated sugar, salt, dried basil leaves, and black pepper to create a roux.
6
Stir in chicken broth; bring the mixture to a rolling boil, then reduce heat and stir for 1 minute.
7
Add frozen peas to the skillet and continue boiling until they are tender, about 5 minutes.
8
Mix in cooked chicken breast until it's fully incorporated into the mixture.
9
To make biscuits, combine baking powder and dried basil leaves in a large mixing bowl.
10
Gradually add milk to the bowl, stirring until you form a smooth dough.
11
Divide the dough into 6 to 8 portions, depending on your preference.
12
Use your palm to flatten each dough portion into a circular shape on a floured surface, such as wax paper.
13
Place the flattened dough balls on top of the chicken mixture in the prepared baking dish.
14
Bake the chicken mixture and biscuits in a preheated oven for 30 minutes.
15
Cover the dish with aluminum foil and continue baking for an additional 10 minutes.
16
Spoon the chicken mixture over the biscuits before serving.
