Ingredients
- 1 pound skinless, boneless chicken breast, diced
- 1 (1.27 ounce) packet fajita seasoning
- 1 tablespoon vegetable oil
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1 onion, chopped
- 10 (10 inch) flour tortillas
- 1 (8 ounce) package shredded Cheddar cheese
- 1 (8 ounce) package shredded Monterey Jack cheese
- 1 tablespoon bacon bits
Instructions
1
Acquire the necessary components, heat up your broiler, and lightly coat a baking sheet with cooking spray.
2
Combine the chicken with fajita spices to give it a flavorful twist, then arrange it on the prepared baking sheet. Place the chicken under the broiler and cook until it reaches a fully cooked state, with no pinkness remaining in its center, approximately 5 minutes.
3
Preheat your oven to a moderate temperature of 350 degrees Fahrenheit (175 degrees Celsius).
4
Heat oil in a large saucepan over medium heat, stirring occasionally. Introduce the bell peppers, onion, and cooked chicken into the saucepan. Continue to cook and stir until the vegetables have softened, taking around 10 minutes.
5
Layer half of each tortilla with a combination of chicken, vegetable mixture, shredded Cheddar cheese, melted Monterey Jack cheese, and crispy bacon bits.
6
Fold the tortillas in half and position them on a baking sheet.
7
Bake the quesadillas in the preheated oven until the cheese has melted and is golden brown, approximately 10 minutes. Cut each quesadilla into wedges.
8
Serve the quesadillas alongside a selection of salsa and sour cream for a delicious accompaniment.
