Chicken and Wild Rice Soup
Ingredients
  • 2 cooked, boneless chicken breast halves, shredded
  • 4 cups chicken broth
  • 2 cups water
  • 1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup butter
  • 2 cups heavy cream

Heat a large pot over medium heat, then add chicken, broth, and water to it. Bring the mixture to a rolling boil before adding rice and stirring gently. Set aside the seasoning packet for later use. Cover the pot with a lid and take it off the heat source.

In a small bowl, whisk together flour, salt, and pepper to create a smooth mixture.

Melt butter in a medium-sized saucepan over medium heat, stirring occasionally. Once the butter has melted, add the contents of the seasoning packet and continue to heat until it becomes bubbly. Lower the heat to a low setting, then gradually add the flour mixture to the butter mixture in small increments, stirring constantly to create a smooth paste. Whisk in cream slowly and continuously until the mixture is fully incorporated and free of lumps. Cook for about 5 minutes, or until the mixture has thickened.

Slowly pour the flour and cream mixture into the hot broth and rice, stirring constantly to combine. Continue to cook over medium heat until the mixture is heated through, taking around 10-15 minutes.
