Chicken and Mushroom Bake
Ingredients
  • 3 tablespoons vegetable oil
  • 1 1/2 pounds boneless chicken breast, cut into strips
  • 8 ounces cremini mushrooms, sliced
  • 5 ounces oyster mushrooms, stemmed and sliced
  • 4 ounces shiitake mushrooms, stemmed and sliced
  • 1 clove garlic, finely chopped
  • 2 tablespoons all-purpose flour
  • 1/2 cup white wine
  • 2 cups chicken stock
  • 1/2 teaspoon ground sage
  • salt and ground black pepper to taste
  • 1/4 cup heavy whipping cream
  • 1 tablespoon chopped fresh parsley

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Heat a generous amount of oil in an enormous skillet over a moderate heat setting. Introduce chicken strips into the skillet; cook and stir constantly until they develop a rich brown color, taking approximately 1 to 2 minutes on each side. Transfer the cooked chicken strips to a spacious baking dish.

In the same skillet, combine an assortment of mushrooms - including cremini, oyster, and shiitake - along with garlic. Cook and stir the mixture until it becomes tender and soft, taking around 5 minutes to achieve this. Gradually incorporate flour into the skillet until it is fully blended with the mushroom mixture. Slowly add white wine to the skillet, followed by chicken stock, sage, salt, and black pepper. Bring the sauce to a gentle simmer and cook until it thickens, approximately 5 minutes later.

Immediately remove the skillet from heat and gently stir in heavy cream.

Pour the savory sauce over the chicken strips in the casserole dish; mix it gently to combine. Cover the dish with aluminum foil.

Place the covered casserole dish in the preheated oven and let it bake until it's bubbly, taking roughly 30 minutes to achieve this.
