- 1/4 teaspoon salt
- 3/4 cup white sugar
- 1/2 cup vegan margarine (such as Earth BalanceĀ®)
- 1 teaspoon vanilla extract
- 2 tablespoons coconut milk

Combine the dry ingredients - flour, baking soda, and salt - in a bowl and whisk until well combined.

Using an electric mixer, blend the sugar and vegan margarine in a mixing bowl until smooth and creamy, approximately 2 minutes. Introduce the vanilla extract into the mixture and blend until incorporated. Gradually incorporate the dry ingredients into the sugar mixture, followed by adding coconut milk 1 tablespoon at a time until the dough comes together. Cover the dough with plastic wrap and refrigerate for 30 minutes.

Heat your oven to 350 degrees F (175 degrees C). Place parchment paper on two baking sheets.

On a floured surface, roll out the chilled dough to a thickness of 1/4 to 1/2 inch. Dust a cookie cutter with flour and cut out cookies, re-flouring as necessary. Arrange the cookies on the prepared baking sheets.
