Chewy Raisin Oat Bars
Ingredients
  • 3/4 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup raisins
  • 1/2 cup flaked coconut
  • 1/2 cup pitted sour cherries, drained with liquid reserved
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (or 175 degrees Celsius for those using metric measurements).
2
In a medium-sized bowl, merge together rolled oats, half a cup of brown sugar, softened butter, and half a cup of all-purpose flour until you achieve a crumbly consistency. Press this mixture into the bottom of a 9-inch square baking dish.
3
Bake your crust in the preheated oven for 15 minutes, allowing it to set and become firm.
4
In the same bowl used earlier, whisk together a cup of brown sugar, half a cup of all-purpose flour, eggs, vanilla extract, baking powder, and salt until well combined. Stir in raisins, shredded coconut, and dried cherries, adding a small amount of cherry juice to prevent the filling from becoming too stiff. Spread this mixture evenly over your pre-baked crust.
5
Bake your entire dessert in the preheated oven until it is firm and lightly golden brown, taking approximately 30 minutes to complete. Once done, allow your bars to cool before cutting them into individual portions.
