Ingredients
- nonstick cooking spray
- 2 cups white sugar
- 2 cups light corn syrup
- 1 pound butter
- 2 cups heavy cream
- 2 teaspoons vanilla extract
- 8 cups pecans
Instructions
1
Prepare two baking sheets by lining them with aluminum foil, which will make cleanup easier. Next, lightly coat the foil with non-stick cooking spray to prevent any food residue from sticking.
2
In a large saucepan, combine granulated sugar and corn syrup over medium heat. Bring the mixture to a boil, then gradually increase the temperature until it reaches 250 degrees F (120 degrees C). Remove the saucepan from the heat source and let it cool slightly, allowing you to add butter without it seizing up. Stir in the butter until it is fully incorporated and melted. Gradually pour in heavy cream, continuing to heat the mixture over low heat until it reaches 242 degrees F (116 degrees C). Remove the saucepan from the heat source and let it cool down slightly, then stir in vanilla extract and chopped pecans.
3
Using a spoon or small scoop, drop the mixture onto the prepared baking sheets in small portions. Allow the treats to cool completely before wrapping them tightly with plastic wrap for easy storage.
