- 3 cups quick cooking oats

- 2 tablespoons water
- 2 tablespoons white sugar, or as needed

Combine the dry ingredients, including flour, cinnamon, baking soda, and salt, in a medium-sized bowl until they are uniformly blended.

Using an electric mixer, blend the butter, 1 cup of white sugar, and brown sugar in a large bowl until it reaches a smooth consistency, taking at least 2 to 3 minutes to achieve this. Gradually add the eggs one by one, followed by the addition of vanilla extract. Combine the dry ingredients with the wet mixture until they are fully incorporated.

Add oats to the dough and mix until it is thoroughly combined. Cover the bowl with a lid and refrigerate the dough for at least 1 hour to allow it to rest.

When you're ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Spray two cookie sheets with a non-stick cooking spray to prevent the cookies from sticking. Place water in one small bowl and 2 tablespoons of sugar in another small bowl for later use.

Form the chilled dough into balls, approximately the size of walnuts, and place them 2 inches apart on the prepared cookie sheets. Dip a large fork into water, then dip it in sugar to coat, and use it to flatten each cookie. If necessary, rewet the fork and re-sugar it before flattening the next cookie.

Bake the cookies in the preheated oven for 8 to 10 minutes, or until they are light golden brown around the edges and nearly set in the center. Switch the racks halfway through baking to ensure even cooking. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
