Chestnut Herb Stuffing
Ingredients
  • 2 cups chestnuts
  • 1 1/2 cups margarine
  • 1/2 cup chopped onion
  • 2 teaspoons poultry seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 (1 pound) loaves day-old bread, cubed
  • 3 large eggs
  • 1/4 cup milk
Instructions
1
Make shallow cuts in the surface of chestnuts using a sharp blade.
2
Place the chestnuts in a medium-sized pot with enough water to cover them and bring the mixture to a rolling boil.
3
Cook until they become soft and tender, approximately 25 minutes. Drain the water, remove the skins, and chop the chestnuts into smaller pieces.
4
Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
5
Melt butter in a medium-sized saucepan over medium heat.
6
Add the chopped chestnuts, sliced onion, dried poultry seasoning, salt, and pepper to the saucepan.
7
Cook until the onions are soft and tender, taking around 3 minutes.
8
Transfer the mixture to a medium-sized baking dish and mix it with cubed bread.
9
In a small bowl, whisk together eggs and milk until well combined.
10
Pour the egg mixture over the cubed bread mixture.
11
Bake in the preheated oven until the surface is crispy and lightly browned, taking between 30 to 45 minutes.
