Preheat your oven to a high temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Combine sugar, flour, baking powder, and baking soda in a large mixing bowl using an electric whisk until the ingredients are well blended.

Melt butter in a medium-sized skillet over a moderate heat source, stirring occasionally. Cook the pitted cherries in the butter until they are tender and have absorbed most of the butter's flavor, sprinkling them with 1 tablespoon of sugar during this time. Set the cherries aside.

Create a central depression in the dry ingredients mixture, then pour in 1/2 cup of olive oil, eggs, and yogurt. Gently stir the mixture to form a soft dough-like consistency. Transfer the batter into a 9x12-inch baking dish. If desired, add an extra 1 tablespoon of olive oil on top for added flavor and moisture. Finally, spread the cooked cherries evenly over the batter.
