- 3 ounces pine nuts
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon white sugar
- 1 teaspoon dried oregano
- salt and pepper to taste
Instructions

Combine a medley of cherry tomatoes, green olives, black olives, and spring onion in a large mixing container.

Heat a dry skillet over medium heat, and toast pine nuts until they turn golden brown, stirring constantly.

Add the toasted pine nuts to the bowl with the tomato mixture.
