  • 1/3 cup milk
  • 1 large egg

  • 1 cup fresh pitted and quartered sweet cherries
  • 1 tablespoon white sugar

Preheat your oven to 400 degrees Fahrenheit, or 200 degrees Celsius. To prepare the muffin tin, place a sheet of paper liners into each of the 12 cups.

In a separate bowl, combine flour, three-quarters cup granulated sugar, baking powder, and salt.

Meanwhile, in a smaller bowl, whisk together oil, milk, egg, and almond extract until well combined.

Gradually pour the wet ingredients into the flour mixture and gently stir until everything is fully incorporated.

Add cherries to the batter and fold them in.

Spoon the prepared batter into each of the 12 muffin cups, filling them two-thirds full.

Finish by sprinkling any remaining sugar over the top of each muffin.

Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of each muffin comes out clean.
