  • 3 cups whole milk
  • 1 cup white sugar
  • 1 (10 ounce) jar maraschino cherries, with juice
  • 8 egg yolks
  • 2 teaspoons almond extract
  • 12 ounces bittersweet chocolate, chopped

Combine the contents of a large saucepan, consisting of cream, milk, sugar, and cherry juice from a jar, over medium heat. Allow the mixture to reach a gentle boil, then carefully take it off the heat source.

In a separate container, gently place egg yolks and gradually whisk in the hot cream mixture, adding it two tablespoons at a time until you have incorporated 2 cups of the liquid.

Combine the hot egg yolk mixture with the saucepan's contents, stirring constantly over low heat until the desired temperature is achieved. This should result in a thickened consistency that coats the back of a metal spoon.

Transfer the mixture to a container, cover it with a lid, and refrigerate until chilled, approximately 6 hours.

Chop the maraschino cherries that were set aside earlier and mix them into the chilled custard, along with a few drops of almond extract. Then, stir in some chopped chocolate.
