SERVINGS

Ingredients
- 24 vanilla wafer cookies
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup white sugar
- 2 eggs
- 2 1/2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 (12 ounce) can cherry pie filling
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Prepare a baking dish by lining 24 muffin cups with paper cupcake liners.
3
Insert one vanilla wafer into the bottom of each muffin cup, creating a crunchy base for your cheesecake.
4
In a large mixing bowl, combine cream cheese, sugar, eggs, lemon juice, and vanilla extract. Use an electric mixer to beat the ingredients until they become light and fluffy.
5
Spoon the cream cheese mixture into the muffin cups, filling them 2/3 full to create a delicious cheesecake treat.
6
Bake the muffin cups in the preheated oven for 15 to 20 minutes, or until the cheesecake filling is set and firm to the touch.
7
Allow the muffin cups to cool completely, which should take around 1 and a half hours.
8
Once the muffin cups have cooled, top each one with 2 or 3 cherries from a pie filling, adding a sweet and fruity touch to your cheesecake.
