  • 2 cups water
  • 1 1/2 cups white sugar
  • 1 1/2 teaspoons cream of tartar
  • 25 buttery round crackers
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter

Preheat your oven to a high temperature of 450 degrees Fahrenheit (225 degrees Celsius).

Take the pastry dough and roll it out into a flat sheet. Gently place the bottom layer of pastry into a pie dish, setting it aside for now.

In a large saucepan, bring water to a rolling boil.

Meanwhile, combine granulated sugar and cream of tartar in a small bowl. Gradually add this mixture to the boiling water, stirring constantly. Next, introduce crackers one by one into the mixture. Allow it to simmer for 3 minutes without stirring.

Carefully pour the cracker mixture into the prepared pie dish. Sprinkle the crackers with cinnamon and dot the top with butter. Cover the mixture with the remaining pastry dough, sealing the edges as you go. Make a few small slits in the top crust to allow steam to escape.

Bake the pie in the preheated oven until the pastry is golden brown, taking approximately 30 minutes. You may need to cover the top crust partway through baking to prevent it from burning.
