  • 2 pounds pickling cucumbers, sliced
  • 1/2 yellow onion, sliced
  • 2 red jalapeno peppers, thinly sliced into rings
  • 3 tablespoons kosher salt
  • 2 cups distilled white vinegar
  • 2 cups white sugar
  • 1/4 cup water
  • 2 cloves garlic, sliced
  • 1 tablespoon mustard seed
  • 1 teaspoon celery seeds
  • 1 teaspoon whole black peppercorns
  • 1/2 teaspoon ground turmeric
  • 1/8 teaspoon ground cloves

Combine sliced cucumbers, chopped onion, and diced peppers in a bowl; sprinkle kosher salt liberally over the top and mix until every ingredient is evenly coated. Cover the bowl with plastic wrap and refrigerate, stirring occasionally, for 2 to 4 hours. Rinse the cucumber mixture in a colander under cold running water until all excess salt is washed away, taking around 3 to 4 minutes. Drain the mixture thoroughly.

Start by mixing together vinegar, sugar, water, minced garlic, mustard seeds, celery seeds, peppercorns, turmeric, and ground cloves in a saucepan. Bring the mixture to a gentle simmer and cook until all the flavors have melded together, approximately 2 minutes. Add the previously prepared cucumber mixture to the brine and heat it gently until almost boiling point, then remove from heat and let cool completely. Transfer the chilled mixture to clean jars and store them in the refrigerator.
