Ingredients
- 3/4 cup dark brown sugar
- 1/3 cup cold water
- 1/3 cup fish sauce
- 1/3 cup rice vinegar
- 4 cloves garlic, crushed
- 1 tablespoon soy sauce
- 1 tablespoon fresh grated ginger
- 1 teaspoon vegetable oil
- 8 boneless, skinless chicken thighs, quartered
- 1/2 cup roasted peanuts
- 1 bunch green onions, chopped
- 2 fresh jalapeno peppers, seeded and sliced
- fresh cilantro sprigs, for garnish

Combine the brown sugar, water, fish sauce, rice wine vinegar, garlic, soy sauce, and ginger in a bowl and whisk until the brown sugar is fully incorporated and dissolved, approximately 1 minute.

Set the mixture aside to allow it to meld together.

Heat a significant amount of oil in a large skillet over extremely high heat, then carefully add the chicken.

Pour 1/3 of the prepared brown sugar mixture over the top of the chicken, stirring constantly to create a syrup-like consistency.

Continue cooking and stirring until this mixture has reached the desired state, taking around 6 to 7 minutes.

Pour the remaining brown sugar mixture into the skillet with the chicken, cooking until it reaches a tender state and is no longer pink throughout, approximately 5 minutes.

Add peanuts, green onions, and jalapeƱos to the skillet, stirring until these ingredients have warmed through, taking around 2 to 3 minutes.

Garnish the dish with cilantro before serving.
