Ingredients
- 4 cups diced rhubarb
- 1 cup fresh strawberries, halved
- 1/2 cup white sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 cup brown sugar
- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 teaspoon salt
- 1 pinch ground cinnamon
- 4 tablespoons cold butter, cut into cubes
Instructions
1
Heat your oven to the required temperature of three seventy-five degrees Fahrenheit or one ninety zero degrees Celsius.
2
Next, take a two-quart-sized baking container and apply some lubricant to it in order to prevent any food residue from sticking to the surface.
3
Combine rhubarb, strawberries, white sugar, lemon juice, and a pinch of grated lemon peel together in a bowl.
4
In another bowl, mix brown sugar, whole wheat flour, oats, salt, and a hint of cinnamon until you get a uniform blend.
5
Using your hands or a pastry blender, tear cold butter into the oat mixture until it transforms into a coarse crumbly texture and the butter pieces become small enough to be seen with the naked eye.
6
Pour the rhubarb mixture into your prepared baking container.
7
Spread the oat mixture evenly over the top of the rhubarb mixture, making sure to cover every area uniformly.
8
Place your baking container in the preheated oven and bake until it reaches a golden brown color and is bubbling with steam, approximately thirty-five minutes.
