  • 1 pound fresh spinach
  • 12 eggs
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 6 slices bacon, chopped
  • 1/2 onion, diced
  • 1 pinch salt
  • 3 ounces crumbled feta cheese

Firstly, preheat your oven to a high temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Then, melt butter in a large oven-safe skillet over extremely high heat. Quickly toss the fresh spinach leaves into the hot butter until they have wilted, taking approximately 30 seconds.

Drain the spinach thoroughly and use a paper towel to remove as much moisture as possible. Transfer the wilted spinach to a cutting board and chop it into smaller pieces.

Next, whisk eggs in a bowl with a pinch of salt, black pepper, and cayenne pepper until they are thoroughly mixed together.

After that, cook the crispy bacon in the same skillet used to cook the spinach over medium-high heat, stirring occasionally, until it has released its fat and is almost crispy, taking about 5 to 8 minutes.

Use a paper towel held in tongs to remove excess bacon grease from the skillet. Reduce the heat to medium and sauté the chopped onion with the cooked bacon until it is translucent, taking around 5 more minutes.
