Chef John's Spinach Artichoke Dip
Ingredients
  • 2 tablespoons butter
  • 1/2 cup green onions, white and light green parts only, thinly sliced
  • 2 cloves garlic, minced
  • salt
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
  • 8 ounces cream cheese
  • 1/2 cup shredded Gruyere cheese
  • 1/2 cup finely grated Parmigiano-Reggiano cheese
  • 1/4 teaspoon hot sauce
  • 1 pinch ground nutmeg
  • salt and freshly ground black pepper to taste
  • 1/4 cup shredded mozzarella cheese
Instructions
1
Begin by preheating your oven to a high temperature, specifically 400 degrees Fahrenheit or 200 degrees Celsius.
2
Next, melt the butter in a saucepan over a relatively low heat setting, stirring occasionally until it reaches its melting point. Introduce the sliced onions and a small amount of salt into the saucepan, allowing them to cook until they become soft and translucent, approximately 5 minutes. Stir the minced garlic into the onions and then remove the saucepan from the heat source.
3
Combine all the ingredients in a large mixing bowl, including the previously cooked onion and garlic mixture, fresh spinach leaves, canned artichoke hearts, softened cream cheese, grated Gruyere and Parmigiano-Reggiano cheeses, hot sauce, ground nutmeg, salt, and black pepper. Mix everything together until it reaches a uniform consistency.
4
Spoon the prepared artichoke mixture into two individual serving dishes, followed by a generous sprinkling of shredded mozzarella cheese on top.
5
Finally, place the two ramekins in the preheated oven and bake until the tops are golden brown and emit a gentle bubbling sound, approximately 25 minutes.
