Chef John's Spicy Turkey Burger
Ingredients
  • 1 1/2 pounds ground turkey
  • 1 1/2 tablespoons plain bread crumbs
  • 1 1/2 tablespoons ground almonds
  • 1 teaspoon chile paste
  • 2 cloves garlic, crushed and minced
  • 1 1/2 teaspoons finely grated fresh ginger
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons garam masala
  • 1 tablespoon lemon juice
  • 2 tablespoons plain yogurt
  • 2 tablespoons chopped fresh cilantro

Combine ground turkey, breadcrumbs, almonds, chili paste, garlic, ginger, salt, garam masala, lemon juice, yogurt, and cilantro in a bowl. Use a spatula or your hands to mix everything together until it's well combined

Take the ground turkey mixture and shape it into a single ball. Divide this ball into four equal portions, making sure each piece is roughly the same size. Place these pieces in the refrigerator for about an hour to firm up.

After the turkey mixture has chilled, use your hands to shape each portion into a patty. Make sure your hands are slightly damp so the mixture sticks together nicely

Preheat your grill to a medium heat setting. Place the turkey burger patties on the grill and let them sit for a few minutes until it's hot enough. Grill the turkey burgers over medium heat, turning them occasionally, until they appear to be about halfway cooked up one side. Flip the patties over and continue grilling for another 4 to 5 minutes, or until they're done when the surface is cracked and juices start rising to the top
