  • 2 tablespoons ancho chile powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon chipotle chile powder
  • 1/2 teaspoon dried oregano
  • 2 1/2 cups water, or as needed
  • 1 cup tomato puree
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced

Heat a generous amount of olive oil in a substantial cooking vessel over a moderately high heat setting. Cook and stir the hot Italian sausage, an onion, and a small amount of salt in the hot oil until the sausage is nicely browned and crumbly, and most of its liquid has evaporated, taking approximately 10 minutes to achieve.

Add a blend of spices to the mixture, including ancho chile powder, paprika, cumin, black pepper, chipotle chile powder, and oregano; sauté until the aroma is released, approximately 2 minutes.

Introduce water and tomato puree into the mixture; bring it to a gentle boil. Lower the heat to a low setting and cook at a steady, slow simmer until the sausage is tender, requiring about 45 minutes to accomplish.
