Chef John's Spicy Chocolate Cookies
Ingredients
  • 1/2 cup dried currants
  • 2 tablespoons coffee flavored liqueur (such as Kahlua®)
  • 4 ounces unsweetened chocolate
  • 2 ounces bittersweet chocolate
  • 3 tablespoons unsalted butter
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 3/4 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup dark chocolate chips
Instructions
1
Begin by preheating your oven to a high temperature of 350 degrees F (175 degrees C).
2
Next, prepare your baking surfaces by lining two baking sheets with a heat-resistant material such as parchment paper or silicone mats.
3
In a small saucepan, gently warm currants and coffee liqueur over low heat until they start to bubble, approximately 2 minutes. Remove from the heat source and set aside.
4
In a separate bowl, melt unsweetened chocolate, bittersweet chocolate, and butter together. Place the bowl on top of a saucepan filled with 1-inch of water that is also being heated over low heat. Stir the chocolate mixture occasionally until it has fully melted, about 5 minutes. Remove from the heat source and set aside.
5
In a separate large bowl, mix together flour, black pepper, baking powder, salt, cinnamon, and cayenne pepper. Set the bowl aside.
6
In a small bowl, whisk together sugar and eggs until they become light, fluffy, and pale yellow in color, approximately 5 minutes. Slowly whisk in vanilla extract and the melted chocolate mixture.
7
Mix the flour mixture into the sugar and chocolate mixture until they are fully combined.
8
Add dark chocolate chips and the liqueur-soaked currants to the mixture, stirring until they are fully incorporated.
9
Spoonfuls of cookie dough should then be dropped 2 inches apart onto the prepared baking sheets.
10
Bake the cookies in the preheated oven until they are almost set, approximately 12 minutes.
11
Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes.
12
Transfer the cookies to a cooling rack and permit them to finish cooling, another 5 minutes.
