Chef John's Simple Pizza Dough
Ingredients
  • 1/4 cup whole wheat flour
  • 3 cups all-purpose flour
  • 1/4 teaspoon active dry yeast
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon white sugar
  • 2 tablespoons olive oil
  • 1 1/2 cups warm water (100 degrees F or 38 degrees C)

Combine whole wheat flour, all-purpose flour, yeast, salt, sugar, olive oil, and warm water in a bowl using a spatula until you achieve a cohesive dough that separates cleanly from the sides of the container, approximately 3-4 minutes.

Allow the mixture to rest in a warm environment (80 to 95 degrees F or 27 to 35 degrees C) for an extended period of time, around 18 hours, until it has doubled in size.

Preheat your oven to a high temperature of 550 degrees F (280 degrees C). Line the baking sheet with cornmeal to prevent sticking.

Transfer the dough onto a lightly dusted surface and sprinkle additional flour if necessary. Form the dough into a rectangular shape, then divide it evenly into four equal portions. Shape each piece into a ball by gently stretching and tucking the dough to create a smooth surface, adding more flour as needed. Cover the dough balls with a towel and allow them to relax for 15 minutes.

To shape the crust, sprinkle the surface with flour and gently press flat. Utilize a rolling pin to create a thin disk approximately 9 inches in diameter.

Transfer the formed crust to the prepared baking sheet and add your preferred toppings. Bake on the bottom rack for 4 minutes, then move to the middle rack and bake for an additional 5-6 minutes, or until the bottom is crispy and the top is lightly browned. Finally, transfer the baked crust to a cooling rack to cool slightly before serving.
