Chef John's Simple Apple Pie
Ingredients
  • 6 tablespoons unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup water
  • 1/4 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 (15 ounce) package double crust ready-to-use pie crust (such as Pillsbury®
  • 4 large red apples, cored and thinly sliced
Instructions
1
Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).
2
Melt butter in a substantial saucepan over medium heat, stirring occasionally. Introduce brown sugar, white sugar, water, cinnamon, and salt into the saucepan, blending them harmoniously. Bring the mixture to a rolling boil, stirring continuously until the sugar dissolves completely, then take the saucepan off the heat.
3
Unroll a pie crust and shape it into a 9-inch circular dish, pressing the dough firmly into place. Fill the pie crust with sliced apples. Unroll a second pie crust on a flat surface and cut it into 8 thin strips, each approximately 1 inch wide. Arrange the strips in a crisscross pattern over the apples or weave them into a lattice crust design. Press the edges of the bottom crust firmly with your fingers to seal the lattice strips in place.
4
Pour the caramel sauce over the pie, covering the lattice strips; let any remaining sauce drizzle over the crust and onto the filling.
5
Place the pie in the preheated oven for 15 minutes. Reduce the heat to a moderate temperature of 350 degrees Fahrenheit (175 degrees Celsius) and continue baking until the crust is golden brown, the caramel on top of the crust is set, and the filling is bubbly, taking an additional 35 to 40 minutes. Allow the pie to cool completely before slicing.
