Ingredients
- 18 ounces semisweet chocolate, chopped
- 10 tablespoons unsalted butter
- 5 large eggs, at room temperature
- 4 teaspoons white sugar
- 4 teaspoons all-purpose flour
- 1 pinch cayenne pepper
- 1 pinch salt
Instructions
1
Preheat the oven to a high temperature of 425 degrees F (220 degrees C).
2
To prepare the cake pan, apply a thin layer of butter and then dust it with flour to prevent sticking.
3
Combine semisweet chocolate and unsalted butter in the top of a double boiler over gently simmering water, stirring constantly with a rubber spatula to ensure thorough melting and blending of the ingredients. Continue stirring until both chocolate and butter are fully incorporated.
4
In a separate bowl, whisk eggs with sugar using an electric mixer or a manual whisk until the mixture becomes light and extremely dense, taking around 5 to 10 minutes.
5
Gradually incorporate flour, cayenne pepper, and salt into the egg mixture using a whisk to combine all the ingredients.
6
Combine 1/4 of the egg mixture with the melted chocolate and butter, stirring until well combined.
7
Then, pour this chocolate-egg mixture into the remaining egg mixture and stir until everything is fully incorporated.
8
Pour the batter into the prepared cake pan.
9
Bake in the preheated oven until it's just set, with a slight jiggle remaining on the surface, taking around 14 to 15 minutes.
10
Allow the cake to cool down completely at room temperature, approximately 30 minutes.
11
Cover the cooled cake with aluminum foil and refrigerate it until chilled, waiting for at least 1 hour.
