Chef John's Refreshing Watermelon Drink

  • 1/2 seedless watermelon
  • 2 cups cold water
  • 1/2 cup white sugar, or to taste
  • 1/2 cup water
  • ice, as needed

Extract the pulp from a watermelon half and place it in a blender with 2 cups of chilled water. Cover the blender with a cloth to prevent splashing and blend until smooth, approximately 1 minute.

To remove any remaining fibers, pour the blended mixture through a fine-mesh sieve into a large container. Discard any remaining pulp in the sieve.

If desired, skim off any excess foam from the juice and discard it.

Meanwhile, combine sugar and 1/2 cup of cold water in a saucepan over medium heat. Stir constantly until the sugar has dissolved and the mixture is hot, about 2 minutes.

Allow the simple syrup to cool to room temperature, approximately 20 minutes. Then, stir it into the watermelon juice to achieve your desired level of sweetness.

Fill a 2-quart pitcher with the agua fresca drink and refrigerate it for at least 30 minutes to chill.

To serve, fill tall glasses with ice cubes and pour the agua fresca drink over the ice. Serve with straws.
