- 1 1/2 teaspoons coarse sea salt
- 2 cups white sugar
- 1/2 cup light corn syrup
- 2 tablespoons water
- 5 tablespoons unsalted butter
- 1/2 teaspoon baking soda

Preheat your oven by setting the temperature to 375 degrees Fahrenheit.

Prepare a baking surface by covering it with a flexible, heat-resistant mat or a sheet of paper designed for baking.

Combine the pumpkin seeds and sea salt in a bowl, stirring until they are evenly mixed.

In another bowl, blend the sugar, corn syrup, and water together using a heat-resistant container over medium-high heat. Add butter to the mixture and stir constantly as it reaches its boiling point. Continue cooking until the mixture turns a deep golden color, taking around 10 to 15 minutes.

Immediately remove the saucepan from the heat source and whisk in the baking soda until it is fully incorporated.

Pour the pumpkin seed mixture into the sugar mixture, stirring until they are well combined. Transfer this mixture to your prepared baking sheet.

Place another silicone mat on top of the pumpkin seed mixture and press it down firmly to create an even surface for the brittle. Allow this mixture to harden for about 30 seconds before removing the top mat.

Use a sharp knife to cut and shape the brittle into your desired forms. Let it cool completely before breaking it into pieces.
