Chef John's Marshmallow Rocky Road

  • 1 1/2 cups dark chocolate chips
  • 3 tablespoons unsalted butter, cubed
  • 2 teaspoons maple syrup
  • 1 1/2 cups miniature marshmallows
  • 1 1/4 cups lightly salted roasted almonds
  • 1/4 cup unsweetened cocoa powder

Combine dark chocolate chips, butter, and maple syrup in a heat-resistant container that can be placed over a saucepan filled with approximately 1 inch of boiling water, positioned on the lowest heat setting on your stovetop. Allow the mixture to dissolve; refrain from stirring.

While the chocolate is melting, cover an 8x8-inch baking tray with parchment paper to prevent sticking.

Once the chocolate has melted, blend it together with a spatula until it reaches a uniform consistency and shines. Remove from heat and combine the chocolate mixture with marshmallows and almonds until they are fully incorporated.

Transfer the mixture to the prepared baking pan in a swift motion, ensuring an even distribution without smoothing or pressing down on the top surface. Allow it to cool to room temperature, approximately 30 minutes. Cover with parchment paper and refrigerate until well chilled and set, around 2 hours.
